Mint Cucumber Soup
Blend two medium cucumbers, two sprig mint leaves, 1 garlic clove, 1 cup curd, 2 tbsp lemon juice, 2 tsp olive oil, salt and pepper to taste. Add cold water to adjust the consistency and serve quickly or you can refrigerate overnight and serve next day too.

Blend one cup de-seeded watermelon chunks, 3-5 mint leaves, one tsp ginger and garlic paste, salt and pepper to taste, 1 tsp chilli flakes. Refrigerate and serve a cold, with a topping of mint leaves.
Chickpea Sesame Soup
Blend one cup soaked and boiled chickpea, 1 garlic clove, 2 tbsp sesame seeds, one tsp roasted cumin seeds, 2 tsp lime juice, 2 tbsp olive oil, salt and pepper to taste. Blend all ingredients nicely to make a smooth paste. Add a cold water to adjust the consistency and serve fresh. Avocado Spinach Soup
Blend parboiled one cup spinach leaves, 1 ripe avocado, 1 garlic, 2 tsp basil leaves, one cup yogurt, 2 tbsp lemon juice, 1 tsp paprika powder, salt and pepper to taste. Blend each ingredients and adjust the consistency with cold water. Serve the fresh.
Blend one cup boiled beetroot, half cup yogurt, 1 tsp roasted cumin seeds, 1 tbsp coriander leaves, salt and pepper to taste and a some mint leaves. Adjust the consistency with cold water and serve the fresh.
Green Peas Soup
Blend one cup boiled green peas, half cup milk, 1 tsp roasted cumin powder, 1 tbsp sesame seeds, salt and pepper to taste. Garnish with a teaspoon of extra virgin olive oil and the serve.
