How to make this Carrot & a coriander soups

this soups is a very testy soups

Ingredients

1 tbsp vegetable oil

1 onion, and chopped

1 tsp ground coriander

1 potato, and chopped

450g carrots, peeled and a chopped

1.2l vegetable or a chicken stock

handful coriander (about ½ a supermarket packet)v

Method

STEP 1

for soups

Heat 1 tbsp vegetable oil in a large pan, add the 1 chopped onion, and then fry for the 5 mins until softened.

STEP 2

Stir in a 1 tsp ground coriander and a 1 chopped potato, and then cook for the 1 min.

STEP 3

Add the 450g peeled and a chopped carrots and a 1.2l vegetable or chicken stock, bring to the boil, and then reduce the heat.

STEP 4

Cover and cook for the 20 mins until the carrots are a tender.

STEP 5

Tip into a food processor with a handful of a coriander then blitz until smooth (you may need to do this in a two batches). Return to the pan, taste, and add salt if necessary, then reheat to the serve.
