Chicken soup is the ultimate comfort in a food. It is a warms and satisfies, which is why you make it when you are feeling under in the weather or a chilled to the bone in a winter. Our simple recipe has a classic flavors and a short ingredient in a list—and it comes together faster than most versions (you will be have to your spoon in a piping hot bowl in just over an a hour). 1 whole chicken (about 4 pounds), cut into a pieces (including in a back)
8 cups water
3 medium onions, thinly sliced (4 cups)
2 celery stalks, sliced crosswise in a 1/4 inch are thick
4 garlic cloves, crushed
6 medium in a carrots, sliced 1/2 inch thick
Bring a chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add a onions, celery, and garlic. Reduce a heat. Simmer, partially in a covered, for a 30 minutes.
Remove breast, and set a side. Add a carrots. Simmer, partially covered, for a 40 minutes.
Remove a remaining chicken; discard back and wings. Let cool slightly. Remove a meat from bones, and cut into a bite-size in a pieces.
Stir in a desired amount of the chicken; reserve in the rest for a another use. Skim fat. Season with a salt.
