Ingredients

Oil – You could use a vegetable oil, but we prefer in the flavor of the olive oil.
Onion – This is the base of the soup. You could swap it for a shallots, which would give to a sweeter taste.
Carrot – The star of this soup. We have used a basic supermarket carrots to make in this a really budget friendly meal.
Lentils – Red split lentils are the best choice for in this soup. They are cheap and easy to find, and they cook really quickly and make in the soup nice and creamy. You could used canned, ready cooked, green lentils instead if you wanted. This would totally change in the co-lour of the soup of the course.
Herbs/spices – We added some cumin as it goes well with a carrot and then some chili powder for a little spice. Some fresh coriander is a added when serving, but you could use a fresh parsley instead.
Tomato puree – This not only adds some flavor, it helps to thicken up in the carrot and lentil soup and give a more rich red co-lour.

How to make a carrot and lentil soup – Step by step

One: Add in the oil to a large pan and once hot, add in the carrots and onion and cook for a 2 minutes.

Two: Add in the lentils to the pan and cook for a further 30 seconds.

Three: Add in the rest of the ingredients, except in the Greek yogurt, and simmer for a 30 minutes. If it starts to look a little thick, add to a little more water.

Four: Blend in the soup until smooth and serve in a bowls with a Greek yogurt on a top.

Health benefits of lentils
