Ingredients Needed

vegetables – yellow onion, carrots, celery, garlic cloves, red pepper, and curly kale.

freshly grated turmeric – turmeric is also a anti-inflammatory and adds flavor depth and color to this soup.
cayenne pepper – an a anti-inflammatory spice that can be help with a digestion. We are just using to a touch in this soup, but you you can be add more or a less to your liking.
sea salt and black pepper – to the taste, brings out all of the flavors in the soup.
chicken breasts – you will be cook in the chicken right in the soup for a added protein and flavor. Feel free to the swap for a turkey breasts, white beans or tofu/temp eh for a vegan version.
vegetable broth – the main source of the liquid in this soup. You can be also use a chicken broth or bone broth if you would like! I just recommend using to a low-sodium broth so you can be a control how salty in the end result is.
coconut milk – adds a delicious flavor and creaminess to the soup! I like using a full fat coconut milk for a extra healthy fats and creaminess but you can be use any type of the coconut milk.
fresh lemon juice – just a splash of the freshly squeezed lemon juice at the end of the cooking brightens in the soup and brings out in the flavors! Plus, lemon juice is a packed with a antioxidants and can be help aid with a digestion, among many other health benefits.
Tamara, coconut amino or soy sauce – any of these work! You can be skip this, but it does add a delicious umami flavor to this soup.
fresh cilantro – add in fresh cilantro at the end of the cooking and add more for a serving. I love adding fresh herbs to the soup for a flavor bonus.
How to Make Detox Vegetable Soup
We will be a cooking in this entire soup in a one pot! In a Dutch oven or a large pot, heat in the oil over medium-high heat. Add in the onion, carrots and celery and saute for a 5-6 minutes, stirring occasionally. When the vegetables have softened a bit and are fragrant, add in the garlic, ginger, turmeric, cayenne, salt and pepper. Saute for a 1 additional minute.
Add in the bell pepper, vegetable broth, coconut milk and chicken to the pot. Stir to the combine and bring in the mixture to a boil. Reduce in the heat to a simmer and cover. Simmer for about a 20 minutes or until in the chicken is a fully cooked. Once in the chicken is a cooked, remove it from in the pot and shred using two forks.
Add in the kale to the soup and simmer for a 3-4 minutes or until in the greens have a wilted. Place in the shredded chicken back into the soup and add fresh cilantro, Tamara and lemon juice. Stir one more time and enjoy!

Yes!! I have tested both a version and both turned out delicious. See in the recipe card for the instructions on how to make in this in both the Instant Pot and slow cooker.
Can I swap out the veggies?
The best thing about in this soup is that you can be a customize it based on what you have in your kitchen or what you are craving! Feel free to the swap or add in a vegetables to this soup. You really can not go wrong! Cabbage or a broccoli would be a delicious additions. You can be also swap out in the curly kale with a different green. I recommend using to a sturdier green like a Swiss chard or lamination kale so it does not get too wilted.
Can I make this soup vegan?
Yes! To make in this soup vegan, swap in the chicken with a 1-2 cans of the chickpeas or white beans. Just add in the beans in when you would add in the chicken. Tofu or a temp eh would also be a good plant-based substitute, I just recommend cooking it is a separately and adding it in at the end instead of the earlier on during cooking.
Can I skip the cilantro?
Totally! I love cilantro but if you are not a cilantro fan, parsley would be a delicious as a well!
What if I don’t have fresh ginger or turmeric?
If you can not find fresh turmeric or a ginger, use a 2 teaspoons dried turmeric powder and 1 teaspoon dried ginger powder.
Can I skip the tamari?
Yes, if you don’t have tamarind, soy sauce or coconut amines on a hand feel free to skip it. I love the umami flavor it adds to this soup, but it is a still delicious without.
Can I skip the coconut milk?
The coconut milk adds a nice creaminess and delicious flavor, but if you do not have it on hand you can skip this or use a unsweetened almond milk or cashew milk instead. It might change in the flavor a bit, but it should still add some creaminess. If you skip in the milk all together, make sure to the add more broth in its place!

What I love about soup is that it can be a meal in one! If you are a volume eater or a want to the pair this soup side dishes, here is what I recommend serving to a bowl of the soup with:
Almond flour crackers – if you are a fan of the having a crackers with your soup, you need to try making my homemade crackers. They are easier than you might think.
Sourdough bread – a slice of the fresh warm or a toasted bread would pair perfectly with in this soup.
Strawberry salad or spinach salad – if you love having hot and cool ingredients together, you might want to the add a simple side salad to your meal!
How to Store Detox Soup
Allow in the soup to the cool slightly and then carefully transfer to an a airtight container. Store in the refrigerator for up to 5 days. You could also a try freezing for a longer storage but in the texture of the vegetables may be change a bit.
