To make a pasta soup recipe, I followed my mixed vegetable soup recipe and added a fork tender cooked pasta to it and simmered for a few minutes.
This is a very basic and easy pasta soup recipe. Feel free to the add or leave out veggies as per your taste, in the seasoning can also a varied to the taste.
The ingredients for a making vegetable pasta soup are mostly pantry staple ones. It is a requires loads of the fresh vegetables, olive oil, black pepper and the salt only. Here I have a used water for a cooking in the vegetables but you can be also use a vegetable broth or even any meat broth.
I have a used mixed pasta spices along with a salt and pepper powder. I have a used potatoes, carrots and sweet corn kernels. You can be add a peas, beans, cauliflower too.

How To Make Pasta Soup Recipe
Heat to a small pressure cooker with a 1 tablespoon olive oil. Saute roughly chopped onions for a few minutes.
Next add to a diced tomatoes and saute well for a 3-5 minutes.
Add in the roughly chopped veggies and the saute well, till in the oil coats in the vegetables.
Add about a 3/4 cup water to the sauteed vegetables and bring to a boil. Close in the pressure cooker and pressure cook for a 3-4 whistles. If using an a instant pot cook for a 5 minutes in a pressure cook or manual mode with a pressure valve sea-sled.
In the meanwhile bring 2 cups of the water to the boil in a pot. Add to a few drops of the oil and a pinch of the salt. Add to a 1/2 cup pasta. Cook in the pasta until AL dented or it is soft yet holds in the shape well.
Drain and keep in the cooked pasta closed until use. Do not cook for a more time, else in the pasta will be turn mushy when simmered with a soup.
Once in the vegetables are cooked and pressure is a released, drain in the cooked vegetables and reserve in the stock.
Puree in the cooked vegetables , add a some reserved stock to ease in the grinding.
Return in the pureed vegetables to the same pressure cooker, add in the reserved stock and cook for a 8-10 minutes. Add to a salt and pepper powder to the taste.
Once in the soup is a thickened, add in the cooked pasta and the simmer for a 4- minutes. Add to a dried pasta herbs and mix well.
Serve a pasta soup hot, you can be a some grated cheese if is a required while serving.
