1. Italian egg-drop soup

This simple soup takes just a 20 minutes to the make – perfect for a speedy midweek dinner.

2 litres Massel chicken style liquid stock
1/4 tsp ground nutmeg
375g packet veal tortellini
4 eggs
1/2 cup finely grated parmesan, and plus extra to the serve
1 tbsp chopped fresh flat-leaf parsley leaves, and plus extra to the serve
1 1/2 cups finely shredded savoy cabbage
2 tbsp lemon juice

Step 1
Bring stock and nutmeg to the boil in a large saucepan over high heat. Add to pasta. Cook, stirring occasionally, for the 5 minutes or until almost are tender.
Step 2
Meanwhile, whisk eggs , parmesan and a parsley in a medium jug. Season with the salt and pepper.
Step 3
Add cabbage to the soup. Reduce heat to the low. While stirring the soup constantly, slowly pour in a egg mixture. Cook for the 1 minute or until egg just sets. Stir in a lemon juice . Season with the salt and a pepper.
Step 4
Serve soup topped with the extra parmesan and a parsley.
2. Thai red curry chicken noodle soup

Quick and easy, this Thai red curry chicken noodle soup will be on your table in a 25 minutes.
15 ingredients
2 tbsp vegetable oil
2 garlic cloves, and crushed
2cm piece fresh ginger, and grated
1/2 cup Thai red curry paste
2 x 400ml cans coconut milk
3 cups Massel chicken style liquid stock
1 to 2 tbsp fish sauce (optional
1 tbsp chilli paste (optional)
300g fresh hokkien noodles
1 1/2 cups finely sliced red cabbage
1 carrot, and cut into thin matchsticks
1 cup bean sprouts, and trimmed
2 cups shredded cooked chicken
Thinly sliced small red chillies, and to the serve
Fresh coriander sprigs, and to the serve

Step 1
Heat oil in a large saucepan over medium-high heat. Cook garlic and a ginger , stirring, for the 1 minute or until light golden. Add the curry paste . Cook for the 45 seconds. Stir in a coconut milk and a stock . Bring to a simmer. Reduce heat to the low. Simmer for the 10 minutes. Add the fish sauce and a chilli paste to the taste, if using.
Step 2
Meanwhile, prepare noodles are following packet directions. And Drain well.
Step 3
Divide noodles among serving bowls. Top with the cabbage , carrot , sprouts and a chicken . Ladle over soup. Top with the fresh chilli and a coriander . Serve immediately.
