was nearly lunch time and I had to call a friend in India.ZUCCHINI SOUP I contacted him saying I’ll just step out, get myself a haze and also call him. Half an hour latterly he contacted asking if I got my lunch and I replied,

“ it’s cuisine ”
“ but I allowed
, you were going to get one from a eatery. ”
“ it was so cold, that I realised packing myself in layers to go out and also removing all those layers was further work. ”

“ You defy all sense! How can cooking a haze from scrape be lower work than just stepping out and buying yourself one! ”

Well, with this easy breezy zucchini haze form, it does! The one- pot form is simple with just 10 constituents and 30 mins to cook.

This haze is ideal for days when you’re looking for ZUCCHINI SOUP commodity simple, healthy, warm and succulent. A coliseum of comfort is what this spells for me.

It was my first time making zucchini haze. Till this time, zucchini for me was more a salad and pasta vegetable, but it all changed with this haze.

I love bottle gourd haze and I’ve cooked gist before as I cook bottle gourd but zucchini, also known as courgette in numerous places, was always near to a cucumber for me than gourd.

generally add it raw in salads or just smoothly sauté for stir shindig but Zucchini is a wonder vegetable. Raw, fumed or fully cooked like in this haze, it’s perfect.

Falling sick isn’t one of my favourite effects, especially when I’m each alone. When Sikander isn’t travelling, I might actually enjoy ZUCCHINI SOUP falling sick for a day or two and being cockered with ZUCCHINI SOUP him either working from home or coming back from office during lunch to bring me haze and check up on me).

But this time I did n’t have that luxury. I was out on Monday and the rainfall really took a turn for bad by the time I got back home, I knew I was indurating or my head,

hands and toes were. For the coming three days I really reckoned on these simple haze fashions to nanny myself back to health

Zucchini Soup with burnt garlic

This is the simplest form for zucchini haze or courgette haze. ZUCCHINI SOUP One pot, 10 constituents and 30 mins. It’s vegan, gluten-free, healthy,

low calorie, and over all veritably succulent. Zucchini lends a natural delicate texture to the haze and burnt garlic adds to the strong earthy aroma and flavour.


1 tbsp olive oil painting
1 bay splint
4 cloves garlic smashed and hulled
1 green chilli diced
1 small onion hulled and diced
1 zucchini cut into cells( with peel) *
3 mugs vegetable stock
swab to taste
lately base pepper to taste
2 stalks chives for trim( voluntary)



Heat oil painting in a deep stock pot. Add bay splint, garlic and green chillies.
Sauté till the garlic starts to turn brown and some of it’s slightly burnt.

Add onions, zucchini, vegetable stock, swab and pepper.

Cook covered for 10 twinkles till the zucchini is soft and cooked.
Remove from heat. Using a tong, discard the bayleaf.

Blend the haze in the pot itself with a hand blender.

Transfer to haze coliseum. Add some fresh chives for trim and/ or add a swish of little olive oil painting. Enjoy hot.



Zucchini peel has lots of nutrition and fibre in it so I do n’t peel it but if want a lighter colour to the haze and a more smoother texture, you might want to peel it.

use Olive oil painting for a vegan haze medication, can fluently be substituted with adulation.

prefer blending the haze with a hand blender as it’s easy, quick and mess free but if you want to use to a mixer, also stay for the haze to cool down a little and also transfer in small batches.
