Thick soups are classified depending upon the type of thickening agent used: purées are vegetable soups thickened with starch; bisques are made from puréed shellfish or vegetables thickened with cream; cream soups may be thickened with béchamel sauce; and veloutés are thickened with eggs, butter, and cream. Other ingredients commonly used to thicken soups and broths include rice, lentils, flour, and grains; many popular soups also include pumpkin, carrots, potatoes, pig’s trotters and bird’s nests.
Other types of soup include fruit soups, dessert soups, pulse soups like split pea, cold soups and other styles.

Ingredients
1 cup – spinach (chopped)
1/4 cup – kiwi (chopped)
1 clove – garlic (chopped)
1/2 tsp + 1/2 tsp – butter
1/2 cup – milk (boiled and cooled)
Salt – to taste
1 tsp – pepper
How to Make Spinach and kiwi soup
Fry garlic in 1/2 tsp of butter.
Now add spinach and kiwi and mix well.
Add a little water and salt.
Cook spinach till soft.
Cool and then process to a fine paste.
Stir in the milk.
Garnish with butter and pepper. Serve hot.
