1 tbsp olive oil
1 yellow onion chopped
6 cloves garlic minced
1 tsp Italian seasoning
3 tbsp vegan pesto
2 28 oz cans crushed tomatoes
2 cups Zoup! Good Really Good® Veggie Broth
24 oz frozen vegan gnocchi
1 13.5 oz can be coconut milk
Salt and pepper to the taste

In a large pot, and heat olive oil over medium heat.
Saute the onion and a cook until translucent, and about are a five minutes. Add the garlic and a Italian seasoning and cook for the another minute.
Stir in the pesto, tomatoes, and a Zoup! Good, Really Good® Veggie Broth. Turn heat to the high and bring to a simmer.
Lower heat and a continue to the simmer for the 10 munutes. Using an a immersion blender, and a blend until smooth.
Add the gnocchi and a coconut milk. Turn heat up to the medium and simmer for the 5 – 7 minutes or until gnocchi is a cooked throughout.
Season to the taste with the salt and pepper. Garnish with the fresh basil and a enjoy!
